Year of the Wooden Horse

Chinese Zodiac uses 12 animal signs to predict people's fortune. The twelve animals are Rat, Cow, Tiger, Rabbit, Dragon, Snake, Horse, Sheep, Monkey, Chicken, Dog and Pig. The 12 Chinese zodiac signs are determined by people's birth year.
2014 is the Chinese Year of the Horse. In Chinese Horoscope calendar, 2014 is the Chinese Green Wooden Horse Year. The New Year Day is on January 31, 2014.


Chinese like Horses for many reasons. Horse provides a good and quick transportation for people before automobiles. Horse can give people a ride to their destination. Therefore, horse is not only a symbol of traveling, but also a sign of speedy success.

Horses like to compete with others. They pursuit for their freedom, passion and leadership. Therefore, people will have busy schedule for their goal in the year of Horse. In Chinese Five Element Horoscope, Horse is connected to fire, red and heat. Also, horse is a social animal and red is also connected to love, therefore. horse is treated as a Romantic Star in Chinese Horoscope.

Horse is intelligent animal. Horses need to be trained to become useful to human. Human can make Horse famous. Without human's guide, Horse just a wild animal. It doesn't know where to go. There is no destination in its life.

In Chinese Five Element theory, Horse is in the Fire group. Horse month is in the middle of summer. Horse is the strongest Fire animal in 12 zodiacs. 2014 is year of Wooden Horse. Wood can help Fire to burn. So Fire can last longer. When Horse meets Tiger and Dog, then they will form even stronger Fire. Too much Fire implies the hot temper and no patient. If the element of Fire is favorable to the person, then the person should have a good fortune in 2014.

Enough of all the astrological stuffs. What happened when Chinese New Year's been celebrated? Most of the Chinese people here in our country followed the traditional celebrations with lots of NOISE! Fireworks and parades! When I was in Manila a few years back, I was able to witnessed one of the parade in Binondo. All the joyful sounds, live drum rolls that doesn't really need big speakers like that of Kustom Amps, because you can hear them loud and clearly. People rich and poor alike watching the parade as the performers are doing the Dragon Dance!

My Thoughts on VN/DC/CL Issue

It's been trending over the internet for almost a week now. And it's kinda annoying that almost everyday I've been seeing in my feeds, hearing on the news, watching on TV programs about this Vhong-Deniece-Cedric issues.

Only thing I can say is that when you lie, you must be that consistent even up to very small details so that people you're telling stories to won't notice that you're lying.. 

I am not a big fan of Vhong. But in this incident, I found his words more credible than that of the girl claiming she's been raped.

Both parties are at fault. First and foremost, Vhong could have said no to the initial invitation of the girl. Having the fact that he's already committed and all. Same goes to Deniece. She's definitely in a relationship with this guy Cedric. All I can see is just a retaliation, a revenge on Cedric's part. 

When the CCTV footage came out yesterday, the netizens reacted as expected. More haters for Deniece and still more haters for Vhong, and for Cedric as well.



There are a lot of inconsistencies on Deniece's statements, the reason why I found Vhong more credible. Adding the fact that she looked so drugged when she was interviewed by ABS-CBN a few days ago.

The footage is so clear though not as clear as that done using sony vegas movie studio, but showed the faces of those who mauled Vhong, showed the time stamps. Of which you can deny the fact that VHong has been set up.

That's just it. Rape can't be proved here too. How can Vhong rape a girl in just 1 minute? Who the hell is she fooling around here.

Nitchie's Vietnamese Noodle House

I am one big fan of Vietnamese Noodles!  
I particularly love Beef Stew Noodles.
But recently I am liking Buto-buto With Beef Stew Noodles. 

Last weekend, my bestfriend and I went to this not-so-famous noodle house located at the corner streets of Burgos and Manalo. Just a few steps away from Pilot Elementary School.


Here's what Nitchie's Vietnamese Noodle House is offering the public. My personal pick all the time is their special soup (buto-buto with Beef stew soup and noodles).







This time around we ordered Buto-buto with noodles and Beef-Stew soup. This the best in town!! So full of flavor and so delicious! You can tell that the meat is cooked to perfection, plus the soup is really delicious and surely is not cooked with artificial flavorings. 


My best-friend Denmay ordered Spring Rolls. Which is also a must-try when you visit the place.

And of course, the noodle soup menu isn't complete without the so called French Breads! Pictured below is the version of Garlic Bread. According to my friend the taste is just the usual taste for a garlic bread, nothing special, but it isn't that oily.

As for me, I ordered my favorite, French Bread with Chicken meat. :) It's yummy and have the after taste of a sweet and a bit sour combination of the mayonnaise and salty chicken meat. 



The noodle soup won't be complete without the sprouts and mint-leaves. A bit of pepper and some chili sauce will surely be perfect!!



Nitchie's Vietnamese Noodle house is open Monday to Saturday 10AM to 2PM and 5PM to 9PM.

I am an Old Songs Fanatic


Who doesn't love listening to old songs, all those acoustic music done using acoustic guitar at guitar center.
Ever since I was young, I am a lover of music. Almost all genres. But I can't resist the charm of listening to old music.

Music from the late 70s to early 80s are such a good music to listen to! They give me the instant nostalgic feeling. Bringing me back to my younger years. 

My Thoughts on Medical Marijuana

It's been in the news these passed few days. Someone in the congress wants to author a bill about regulating medical marijuana. I think its about time that we consider regulating this stuff. When I say regulated, I mean STRICT regulating. So that no one can abuse it's use.
Let us learn all things from everybody

A lot of parents with kids having cancer and some kind of sickness, wherein marijuana helps their children, it's such a huge relief is medical marijuana be legalized in our country.



Allegedly here are the benefits of marijuana: anecdotal evidence for the beneficial effects of marijuana eventually led to the design of controlled scientific studies to examine the benefits of marijuana compared to other treatments. A 1997 review of 6059 marijuana-related articles in the medical literature revealed 194 titles on antiemetic properties, 56 on glaucoma, 10 on multiple sclerosis, 23 on appetite, and 11 on palliative or terminal care. Numerous studies have been performed since that time, with most concentrating on the analgesic properties of cannabis and its derivatives.

As a recreational drug, marijuana is not quite as benign as most of its proponents would claim. Heavy marijuana use results in long-term effects on the brain, including lower responses in those areas which are affected by THC. Although users are able to compensate somewhat through the use of other brain areas, the long term effects of this damage, as users age, has not been determined. This damage may be responsible for impairments noted in short-term and long-term memory, along with a host of possible other psychiatric illnesses. A proportion of marijuana users become addicted and suffer from classic withdrawal symptoms upon abstinence. For a minority of users, marijuana is a gateway drug, and they proceed to use and abuse more powerful psychostimulants. Besides its effects upon the brain, marijuana use can lead to increased risks for respiratory cancers and may have some adverse cardiovascular and cerebrovascular effects in some users. Marijuana use during pregnancy has been shown to result in lower child intelligence, while increasing the incidence of mental health problems. 

But then again, I was thinking that if marijuana's been legalized, there's this another plant- Opium, which opiate came from, which might also have the possibility of raising uses which may lead to opiate addiction.
In every single thing, there's always a pros and cons.

I strongly agree that these stuff, with proper use can give us human a lot of benefits, but as always, "pag sobra nakakasama".

Gifts for Grandparents: Priceless Treasures From Your Kids

Grandparents are typically thrilled to receive gifts made by their grandchildren. When those gifts focus on special memories that the two generations have shared, they're even more cherished.

Sometimes you may struggle to think of what kind of present would be most appreciated. However, putting in the time to help your kids make gifts of special memories is an important way of passing on love from one generation to the next.


Consider these ideas for inspiration:

1. Take pictures whenever your kids are with grandparents. Even though you may feel like you're overdoing it, today's digital cameras make it easy to take hundreds of pictures for special memory projects.

* With photo software like Photoshop Elements, you can place elements of any two or more photographs together. Use such software plus your creativity to help your child design and produce a special gift of memories for Grandma or Grandpa.

2. Designate special drawers or storage boxes for keepsakes. Save small mementos of times your kids spent with grandparents.

* Gifts and souvenirs may not always seem like a big deal at the time. But that t-shirt purchased by Grandma for your son when he was two can make a special (and possibly hilarious) gift someday when he's older!

5. Film videos of your kids with their grandparents. You never know when you might need a snippet of a filmed event involving children and grandparents. Or let your kids play musical instruments like that of a professional clarinet at guitar center. 

* When your kids are in their teens, prepare a montage of film clips taken through the years they were growing up. Grandparents will treasure this visual memory of those precious, short years.

Part of your job as a parent is to teach your children the importance of close family ties. When children are raised in a family where parents save cherished memories, they more easily recognize the incredible value and impact of close family relationships.

If only I can find a trunk that I can use in my home studio, it would be great! It would really be a nice props for my photography stints, specially when my subjects are newborn ones.. :)


I am now focusing on babies and newborns.. And currently building my accessories also along with my props.  Planning to buy some old trunks, baskets and a lot more for this venture.

Chicken Alfredo Pot Pies

Looking for a quick and delicious chicken casserole recipe to satisfy loved ones’ cravings? Try chicken Alfredo pot pies, made more delightful than ever with Bounty Fresh Chicken.

Ingredients:

½ 15 oz. package (1 crust) rolled refrigerated unbaked piecrust
3 cups frozen vegetable blend
3 cups cubed cooked Bounty Fresh Chicken
10 oz. container refrigerated Alfedo pasta sauce
1 tsp. dried thyme, marjoram, or sage, crushed
                               
1. Let piecrust stand according to package directions. Preheat oven to 450 degrees F. In a large skillet, cook frozen vegetables in a small amount of boiling water for 5 minutes; drain. Return to skillet. Stir in chicken, Alfredo sauce, and the dried thyme.

2. On a lightly floured surface, roll pie crust into a 13-inch circle. Cut four 5-inch circles and place on top of casseroles. Press edges of pastry firmly against sides of casseroles. Cut slits in tops for steam to escape.

3. Place casseroles in a foil-lined shallow baking pan. Bake, uncovered, for 12 to 15 minutes or until mixture is heated through and pastry is golden. Makes 4 servings.

BonChon Soy Garlic Chicken Wings

Go for a Korean-inspired treat with this fresh take on a classic: chicken wings. With Bounty Fresh Chicken, these tasty BonChon soy garlic chicken wings are bound to make every gathering of family and friends more special and memorable.

Ingredients:

½ kilo Bounty Fresh chicken wings
Salt and pepper, to season
2 cups corn starch
¼ small onion, shredded
4 cloves garlic, peeled and minced
½ cup light soy sauce
¼ cup mirin
2 tablespoons brown sugar
½ tsp. garlic powder
1 tsp. corn starch
1-inch ginger, peeled and shredded
White sesame seeds for, garnish

1. Pat dry chicken wings. Season then dredge chicken in corn starch. Deep fry until cooked all the way through. Place on paper towel to drain excess oil and allow to dry.

2. To make soy-garlic glaze, combine onion, garlic, soy sauce, mirin, brown sugar, garlic powder, and ginger in saucepan. Place over low-medium heat and stir until sugar is fully dissolved. In a small bowl, place corn starch and a tablespoon of the soy-garlic mixture. Mix to dissolve. Add to the saucepan and stir until slightly thickened.

3. Flash fry chicken in hot oil. Place on paper towel to drain excess oil. Toss chicken wings in glaze. Sprinkle with sesame seeds before serving.

Jamaican “Jerk” Chicken Waffle Sandwiches

Bring out the juiciest, most flavorful part of the chicken (the thighs) and sandwich it in between waffles. The result: Jamaican chicken waffle sandwiches, a zingy, Caribbean-inspired dish that will fill the heart and soul of everyone who takes a bite.

Ingredients:

½ kilo Bounty Fresh boneless chicken thighs, chopped to bite-size pieces
salt and pepper, to season
5 red bird’s eye chilis, de-seeded
2 leeks, chopped
8 cloves garlic, peeled
1 teaspoon ground allspice
Juice of 6 calamansis
6 tablespoons barbecue sauce
2 medium waffles, sliced to wedges
chopped kesong puti, to garnish
chopped green onion, to garnish

1. In a mini-food processor or spice grinder, place chili, leeks, garlic, allspice, and calamansi juice. Pulse to make a paste.
2. Transfer to a bowl and add chicken thighs.
3. Rub chicken all over. Cover and place in the refrigerator for at least an hour.
4. Grill the chicken pieces until cooked all the way through. Toss in barbecue sauce.
5. Place on top of waffle and sprinkle with kesong puti and green onions. Cover with another waffle wedge.
